Pour the milk into the saucepan and drop in the cinnamon stick.

Tip: The cinnamon stick releases its flavour more slowly than ground, but gives a much cleaner, less 'dusty' taste experience.

Start heating on medium heat. When it is steaming and tiny bubbles appear at the edge, turn the heat down to minimum.

Tip: Do not let it boil vigorously, as the taste of the milk changes (cooked milk taste) and nutrients are damaged.

Let the cinnamon steep in the hot milk for another 5-8 minutes, stirring occasionally.

Tip: We call this infusion: under the effect of heat, the spice transfers its aromas to the liquid.

Fish out the cinnamon stick and let the milk cool to a drinkable temperature (approx. 50-60°C).

Tip: If it's too hot, it will burn your tongue and you won't taste the flavours.

Stir in the honey.

Tip: In lukewarm milk, honey retains its beneficial properties.

Pour into mugs and dust the top with a hint of ground cinnamon.

Tip: Sip slowly.
