An essential accessory for winter snuggling. Plum and cinnamon is a classic pairing which, complemented by the tannic depth of black tea, not only warms you up but provides a true dessert experience. It's like sipping liquid plum dumplings.

Wash and destone the plums, then cut into wedges. Place in a saucepan with the water, cinnamon, and cloves.
Tip: Cooking the spices and fruit releases the flavours (extraction). If you just threw them into hot tea, the liquid would remain tasteless.

Simmer gently for 10 minutes until the plums soften and the water takes on their colour and flavour.
Tip: Do not boil too vigorously so the fruit doesn't completely disintegrate.

Remove from heat and add the tea bags. Let steep for 3-5 minutes.
Tip: Do not boil the tea, as tannins will release and it will become bitter. Hot (but not boiling) water is ideal for steeping.

Remove the bags. If the skins bother you, strain it, but it's best with the cooked fruit pieces.

When cooled to a drinkable temperature (below approx. 60°C), stir in the honey.
Tip: Water that is too hot destroys the beneficial properties of the honey.
