Spiced winter fruit punch (Non-alcoholic)

This tea is essentially a non-alcoholic punch, where the essential oils of spices travel through the home with the steam of hot water. Dried rosehip provides not only Vitamin C but also a certain body and acidity that counterbalances the honey's sweetness. During slow steeping (infusion), the hard structure of woody spices (cinnamon, cloves) softens, releasing deep, warming aromas into the water.

Prep the fruit: scrub orange and apple thoroughly. Slice orange thinly, cut apple into wedges or cubes.

Tip: Essential oils in citrus peel dissolve best in hot water, so using the peel is important.

Boil the water in the saucepan. When boiling, turn off heat and wait 1 minute.

Tip: Rolling boil can destroy Vitamin C; quiet, hot water is gentler.

Add fruits, rosehips, cinnamon, and cloves to the water. Cover the pot.

Tip: The lid traps fragrant steam so aromas stay in the tea rather than escaping into the air [condensation].

Let stand (infuse) for 20 minutes. The water will take on the colour and flavour of the fruits and spices.

Tip: Rosehips need time to soften and release their colour.

Strain tea into a jug. When at drinkable temperature (approx. 50-60°C), stir in honey.

Tip: If you add honey while it's boiling hot, it may lose its characteristic floral aroma.

Serve in warm mugs; boiled orange slices can go back in as garnish.

Tip: You can pre-warm the mug with hot water so the drink stays warm longer.

Can I use ground spices?
Better not to, as they make the tea cloudy and can be scratchy on the throat. Whole spices give a cleaner flavour.
