This tea is essentially a non-alcoholic punch, where the essential oils of spices travel through the home with the steam of hot water. Dried rosehip provides not only Vitamin C but also a certain body and acidity that counterbalances the honey's sweetness. During slow steeping (infusion), the hard structure of woody spices (cinnamon, cloves) softens, releasing deep, warming aromas into the water.

Prep the fruit: scrub orange and apple thoroughly. Slice orange thinly, cut apple into wedges or cubes.
Tip: Essential oils in citrus peel dissolve best in hot water, so using the peel is important.

Boil the water in the saucepan. When boiling, turn off heat and wait 1 minute.
Tip: Rolling boil can destroy Vitamin C; quiet, hot water is gentler.

Tip: The lid traps fragrant steam so aromas stay in the tea rather than escaping into the air [condensation].

Tip: Rosehips need time to soften and release their colour.
