Carefully pour in the tequila. Stir in the brown sugar, vinegar, Worcestershire sauce and hot sauce.

Tip: Alcohol has a lower boiling point than water, so intense steam may form initially.

Season with the smoked paprika, salt and pepper. Turn the heat down to low and simmer gently for 15-20 minutes.

Tip: Slow cooking is necessary for the flavours to mature and for the sauce to thicken as excess water evaporates (reduction).

What tequila should I use?
I recommend Silver (Blanco) or Reposado tequila. Gold versions are often coloured and artificially flavoured.
Can children eat this?
During the 15-20 minutes of cooking, a significant part of the alcohol evaporates, but it may contain traces. Longer cooking can minimise this further.
Can I replace the ketchup?
You can use tomato purée, but you will need to increase the amount of sugar and vinegar to balance it.
