Wash the limes thoroughly, grate the green part of the zest, then squeeze out the juice.

Tip: Use only the green zest, the white pith would give a bitter taste. (Avoiding bitter compounds)

Crush the garlic, chop the coriander finely (you can chop the stalks in too for intense flavour).

Tip: Coriander stalks are full of flavour, it would be a waste to throw them away!

Heat the oil in a saucepan and add the garlic. Fry only until you can smell the aroma (approx. 30 seconds).

Sprinkle in the chilli flakes, stir, then immediately pour in the tequila. Careful, the steam might flare up suddenly!

Add the lime juice, water, honey, salt and grated zest. Bring to the boil.

Cook on a medium heat (reduce) for approx. 5-8 minutes until the liquid reduces by half and becomes syrupy.

The sauce remained too runny, what did I do wrong?
You probably didn't boil it long enough. The water and alcohol must evaporate for it to thicken.
Can I use lemon instead of lime?
In an emergency yes, but the distinctive, floral aroma of lime will be missing.
