Recipe FAQ

Can I use frozen fruit?
Not recommended for decoration, as they release water ('bleed') when thawing, which soaks the cream and makes the fruit collapse. However, you can bake them into the dough.
Why does the fruit slide off the top?
If the cream isn't stiff enough, or the fruit is wet. Pat the fruit dry with kitchen paper before placing!
