Bourbon & Mustard BBQ Sauce

This sauce is the essence of the American South: the barrel-aged, vanilla depth of bourbon meets the sharp freshness of mustard. It's not a simple accompaniment, but a characterful addition that elevates even the simplest roast to a festive dish. During cooking, the strength of the alcohol evaporates, leaving behind only the noble aromas of grain and oak barrel, which blend perfectly with the caramelised brown sugar.

Instructions

1

Measure the BBQ sauce, bourbon, mustard, honey and brown sugar into a cold saucepan. Mix thoroughly before heating.

Tip: Mixing cold helps prevent the mustard from curdling suddenly from the heat (emulsion stability).
2

Sprinkle in the spices: smoked paprika, garlic powder, salt and pepper, then pour in the cider vinegar.

Tip: The acidity of the vinegar brightens the flavours and helps cut through the sweetness of the sugar.
3

Start heating over medium heat, stirring continuously, until small bubbles appear on the surface.

Tip: The sugar must be completely dissolved; you shouldn't feel grains at the bottom of the pan.
4

Lower the heat and simmer for 3-5 minutes until the sauce consistency becomes silky and thicker.

Tip: It is ready when it coats the back of a spoon and if you draw your finger through it, the line remains (thickening).
5

Remove from the heat and let cool for at least 10 minutes before serving. It is best served warm.

Tip: As it cools, the texture of the sauce becomes more jelly-like due to pectins and sugars.

Recipe FAQ

Can children eat it?
Although most of the alcohol evaporates during boiling, a minimal amount may remain. If you want to be safe, use apple juice instead.
The sauce is too runny, what should I do?
Cook further over low heat without a lid until the excess water evaporates and it thickens.
