Cut the fillet into finger-thick (approx. 1.5-2 cm) slices. Press lightly ONLY with your palm or the flat side of a mallet, forbidden to beat it!

Tip: Fillet fibres are loose; if you beat them apart, the meat loses its structure and juice.

Season freshly with salt and pepper.

Tip: Salt immediately before breadcrumbing so it doesn't draw moisture from the meat (osmosis).

Bread it: flour, beaten egg, breadcrumbs.

Tip: Ensure the coating covers everywhere, because where there's a hole, meat juices will escape.

Fry in plenty of hot oil for max. 2-3 minutes per side.

Tip: Cooking time is shorter than for average schnitzel. As soon as the crumbs are golden brown, the meat inside is perfect.

Serve immediately, do not rest covered, as the steam softens the coating.

Tip: Tartare sauce or a light potato salad goes well with it.

How well done should it be?
It's a matter of taste, but fillet doesn't benefit from being overcooked (shoe leather). It's hard to see because of the breadcrumbs, so timing is key: aim for medium or medium-well to keep it juicy.
