This recipe is based on the principle of 'maceration' (cold extraction): high-proof vodka acts as a solvent, slowly extracting pigments (anthocyanins) and flavours from blueberries. During weeks of resting, the sharp taste of alcohol softens and merges with fruit sugars and vanilla, creating a velvety, deep burgundy drink.

Wash blueberries and place in a clean jar. Crush berries slightly with a wooden spoon or fork, just enough to split skins.

Tip: Splitting the skin opens the way for alcohol to reach the fruit flesh, making extraction faster and more efficient.

Pour over vodka and add vanilla. Seal jar and shake thoroughly.

Tip: It is important that alcohol completely covers the fruit, otherwise exposed berries may oxidise.

Place in a dark place at room temperature for 2 weeks. Shake the jar every two days.

Tip: Darkness protects pigments from breaking down, while shaking homogenises the solution.

After two weeks, make sugar syrup: boil water and sugar together until sugar dissolves completely and liquid is clear. Let cool completely.

Tip: Never pour hot syrup into alcohol as the alcohol may evaporate!

Strain blueberry vodka through cheesecloth or a fine sieve. Do not squeeze fruit too hard if you want clear liqueur.

Tip: Don't throw away the remaining 'drunken' blueberries; they are divine in cakes or on ice cream!

Mix strained vodka with cold sugar syrup. Pour into sterilised bottles.

Tip: The drink is still 'raw' at this stage. Give it another week in the bottle for flavours to marry (harmonisation).

Why is the liqueur cloudy?
You likely didn't filter it thoroughly enough, and tiny fruit fibres remained. Strain again through a coffee filter!
How long does it keep?
Due to high alcohol and sugar content, it keeps for up to 1 year in a cool, dark place; in fact, the flavour improves with time.
