- Why has it turned bitter?
- You probably peeled the lemon too deeply and included the white, spongy pith (mesocarp). Only the yellow zest is needed!
- Why did it turn cloudy with the syrup?
- This is the 'Ouzo effect' (louche). Lemon oil dissolves in alcohol but not in water. When you add the watery syrup, the oil precipitates in tiny droplets – this is a sign of quality!
Homemade limoncello
Limoncello is the liquid gold of Capri and the Amalfi Coast. There is nothing complicated about this liqueur, just the pure essence of lemon zest. The secret is the 'macera', the steeping time, when high-proof alcohol extracts the fragrant oils in the zest. The result is a thick, opalescent nectar to be consumed ice-cold, cleansing the palate after a meal (digestivo).

Wash the lemons in hot water with a brush. Peel the zest thinly so no white part is included.
Tip: Even organic lemon peel can contain dirt; hot water helps dissolve natural wax too, allowing oils to dissolve better.

Place the peels in the jar, pour over the alcohol, seal, and place in a dark spot for 1 week. Shake daily.
Tip: The alcohol acts as a solvent. In a week, the peels will turn white and brittle as they transfer all oils to the alcohol.

A week later, make a syrup from the water and sugar: heat until the sugar completely dissolves and the liquid is clear. Cool completely to room temperature.
Tip: Never pour hot syrup into the alcohol, as the alcohol would evaporate!

Strain the lemon alcohol from the peels and mix with the cold syrup.
Tip: This is when the magic happens: the liquid turns opalescent yellow (emulsion).

Pour into bottles and rest for at least another 1 week in the fridge/freezer before consuming.
Tip: Due to the high sugar and alcohol content, it won't freeze in the freezer, but the texture becomes syrupy thick.
