- Why did it turn bitter?
- The white pith (albedo) of the orange got in. Only the yellow part is needed, as it contains the essential oils; the white part is full of bitter substances.
Homemade orange liqueur
Homemade liqueur making is the art of 'extraction'. Alcohol is an excellent solvent: it extracts the essential oils (terpenes) from the orange peel, giving us the pure orange flavour. The sugar syrup adds body and softens the harshness of the alcohol.

- Vegetable peeler
- Saucepan

Wash the oranges in hot water and scrub them.
Tip: It is worth washing even organic oranges due to dust.

Using a vegetable peeler, cut the peel thinly. Be careful not to include the white part.
Tip: If some white remains on it, scrape it off with a knife.

Place the peels in a clean jar, pour the vodka over them, and seal. Place in a dark place for 7-14 days.
Tip: Shake daily. The alcohol will take on a yellowish colour over time as the oils dissolve.

After resting, prepare the syrup: boil the water and sugar together until completely dissolved. Cool completely.
Tip: Hot syrup would evaporate the alcohol, so it must be cooled.

Strain the orange vodka (discard the peels) and mix with the cold syrup.
Tip: Filtering through a coffee filter makes it crystal clear.

Fill into bottles and rest for at least another 1-2 weeks before consuming.
Tip: The flavours need to 'meld' (molecular level homogenisation).
