Peanut Marinated Tofu

Peanut butter isn't just for toast! Due to its fat content, it's a perfect marinade base that clings to tofu during frying, forming a caramelised, nutty crust. Lime and ginger ensure it's not too rich.

    Instructions

    1

    Press tofu and dice it.

Tip: Repetition is the mother of learning: wet tofu won't brown!
    2

Mix marinade ingredients (peanut butter, soy, ginger, lime, honey, oil). If too thick, loosen with a little water.

Tip: Marinade must be a thick cream to stick to tofu.
    3

Toss tofu in, let stand 20 minutes.

Tip: Tofu's porous structure absorbs flavours.
    4

Fry in pan over medium heat until golden brown. Careful, peanut butter and honey sugar content burns fast!

    Tip: Turn often.
    5

    Serve sprinkled with peanuts.
