Pizza al Tartufo is a prime example of the "less is more" principle of culinary art. The treasure of the forests of the Umbria region, the truffle, possesses such an intense aroma that it does not tolerate loud flavours alongside it. Therefore, this is a "pizza bianca", i.e., white pizza, without tomato sauce. Garlic, cheese and thyme serve only as background music to the truffle's solo.

Preheat the oven to 220°C. Roll out the dough into a circle.

Tip: The dough should be at room temperature, so it is easier to stretch.

Cut the garlic clove in half and rub the surface of the raw dough with it, then brush thinly with olive oil.

Tip: By rubbing, the volatile oils of the garlic coat the dough without pieces of garlic burning on it (infusion).

Tear the mozzarella over it, and bake for 12-15 minutes until the dough is golden brown and the cheese is runny.

Tip: With white pizzas, good quality cheese is particularly important because there is no tomato to mask defects.

Remove from the oven. If using truffle cream, dot it onto the hot pizza now. If fresh, shave it thinly over it now.

Tip: Truffle aromas are heat sensitive. The steam from the hot pizza warms them up just enough to release their scent, but not lose it.

Sprinkle with Parmesan shavings and fresh thyme. Serve immediately.

Tip: The salty taste (umami) of the Parmesan amplifies the earthy character of the mushroom.

Can I use truffle oil?
Yes, if you don't have fresh truffle, drizzle good quality truffle oil on the pizza at the very end of baking. Do not bake it, because the flavour will evaporate.
What wine should I drink with it?
A fuller-bodied red wine carrying earthy notes or a more mature white.
