Preheat the oven to 180°C. Grease the tin. Sieve the flour, cocoa powder, baking powder, and salt together.

Tip: Cocoa powder tends to clump; sieving is essential.

Beat the butter with the two types of sugar, then add the eggs one by one.

Tip: The acidity and moisture content of the brown sugar makes the cake softer.

Melt the 200g chocolate, leave to cool to lukewarm, and mix into the buttery mass along with the vanilla.

Tip: If you pour it in hot, the butter will melt and separate.

Add the flour mixture and the milk alternately to the mass.

Tip: Do not overmix, only until it comes together.

Bake for 30-35 minutes. When tested with a skewer, the skewer should be a little sticky, but not have runny batter on it.

Tip: If the skewer is completely dry, you have overbaked the chocolate cake.

Cool completely. For the cream, whip the cream with the icing sugar, then drizzle in 50g of melted (but cold!) chocolate.

Tip: Or make ganache: hot cream + chocolate, then cool and whip.

Coat the cake and decorate with stars.
