Preheat the oven to the highest setting (230-250°C). If you have a pizza stone, put it in to warm up.

Tip: Home ovens need time. A hot oven ensures the dough rises suddenly and is crisp outside, soft inside (oven spring).

Roll out the dough by hand or with a rolling pin into a circle on baking paper.

Tip: If the dough springs back while rolling, let it rest for 5 minutes to allow the gluten strands to relax.

Brush the edge of the dough thinly with olive oil, and spread the centre with tomato sauce.

Tip: Oil on the edges helps nice golden brown browning.

Sprinkle with cheese, then place the roast chicken breast slices and olives on top.

Tip: Put the cheese on the sauce, so it protects the dough from getting soggy, and the toppings bake into the cheese.

Bake the pizza for 12-15 minutes until the cheese bubbles and starts to brown, and the edge of the dough is crisp.

Tip: Watch the oven, every appliance bakes differently!

After baking, just before serving, pile on the fresh spinach and sliced avocado. Drizzle with a little extra virgin olive oil.

Why did the avocado turn brown?
Avocado flesh oxidises when in contact with air. Cut it only just before serving and drizzle with lemon juice.
