Chinese Char Siu pizza

Char Siu is the uncrowned king of Chinese BBQ: sweet, savoury and sticky. This fusion pizza marries Cantonese flavours (hoisin, soy, honey) with Italian technique. The caramelised edges of the pork and the melting cheese create a surprisingly harmonious, umami-rich pairing.

Instructions

1

Cut the meat into thin strips. Toss with the Chinese spices and a little oil. Flash fry in a hot pan until it turns white (approx. 3-4 minutes).

Tip: You don't need to cook it completely, as it will bake in the oven, preventing it from drying out (moisture retention).
2

Preheat the oven to 220°C.

Tip: A hot oven is essential.
3

Roll out the dough and spread with the sauce.

Tip: If you have Hoisin sauce, mix it with the tomato sauce for a more authentic taste.
4

Sprinkle with cheese, then distribute the pre-cooked meat over the top.

Tip: Put the cheese underneath to act as 'glue' holding the meat.
5

Bake for 12-15 minutes until the cheese melts and the dough is golden brown.

Tip: The edges of the meat will brown beautifully by this time (Maillard reaction).
6

After baking, drizzle with sesame oil and sprinkle with fresh spring onions and coriander.

Tip: Never overheat sesame oil as it becomes bitter. It is best used as a finishing seasoning.
