- Can I use frozen mango?
- Yes, but let it thaw completely and pour the juice into the blender too, as that contains flavour.
- The sauce became bitter. Why?
- Probably the tahini was rancid, or you squeezed the white pith of the lime in. Always taste tahini on its own before use!
Mango, lime & tahini sauce
This recipe is a textbook example of fusion cuisine: marrying the earthy, heavy profile of Middle Eastern tahini (sesame paste) with tropical mango lightness. Tahini's natural fat content makes the fruit creamy without cream or oil, resulting in a surprisingly full yet refreshing sauce.

Instructions
1
✓
Peel the mango. Cut flesh from the stone and chop.
Tip: Choose soft, honey-sweet mango. If hard, the taste will be sour and texture grainy.
2
✓
Grate the garlic as finely as possible.
Tip: For raw sauces, it is critical that garlic is pulpy, not chunky, otherwise biting into it is unpleasant.
3
✓
Place mango, tahini, lime juice, honey, garlic, ginger, and salt in the blender.
Tip: Tahini oil content and mango fibres will form an emulsion together.
4
✓
Start blending, and drizzle in the water in a thin stream.
Tip: Water amount depends on mango juiciness. Watch consistency: we want a thick cream soup texture.
5
✓
Blend for at least 1 minute until completely smooth and frothy.
Tip: Incorporating air makes the texture lighter (physical aeration).
6
✓
After tasting, add more salt or honey for balance if needed. Salt brings out mango sweetness.
Tip: Flavours should be 'round': sweet, sour, salty, and sesame bitterness all at once.
7
✓
Refrigerate for 15 minutes before serving.
Tip: During resting, fibres swell and sauce thickens slightly.
