Peel the mango. Cut flesh from the stone and chop.

Tip: Water amount depends on mango juiciness. Watch consistency: we want a thick cream soup texture.

Can I use frozen mango?
Yes, but let it thaw completely and pour the juice into the blender too, as that contains flavour.
The sauce became bitter. Why?
Probably the tahini was rancid, or you squeezed the white pith of the lime in. Always taste tahini on its own before use!
