Spiced orange & cinnamon tea

This recipe follows the golden rules of tea making: black tea leaves are delicate and do not like boiling water or long cooking, unlike hard spices (cinnamon, cloves), which need time to unfold. That's why we work in two stages here: first we create a rich spiced base, and then gently steep the tea leaves in it.

Wash the orange thoroughly in warm water. Cut off 2-3 thin strips of its peel (yellow part only), and slice the fruit flesh into rounds.

Tip: The white part of the peel (albedo) contains bitter compounds, so try to only cut the coloured, fragrant outer layer.

Put the water, cinnamon stick, cloves, and cut orange peel into the saucepan. Boil, then simmer for 5-8 minutes.

Tip: This 'decoction making' helps extract the flavours from the hard spices, for which simple steeping would not be enough.

Remove the saucepan from the heat and wait until the water settles (cooling to approx. 90-95°C).

Tip: Boiling water burns the tea leaves, making the drink tart.

Sprinkle the black tea into the spiced water and let stand for exactly 3-5 minutes.

Tip: Use a timer! After 3 minutes invigorating compounds (caffeine) dissolve, but after 5 minutes calming yet bitter tannins dominate.

Strain the drink over the orange slices into cups.

Tip: The heat of the hot tea is just enough to release the essential oils from the fresh orange slices without cooking them.

Stir in honey to taste and serve immediately.

Tip: The acidity of the honey may slightly lighten the colour of the tea; this is a natural chemical reaction.
