Heat over a medium flame until it begins to steam, but DO NOT boil. Maintain at this temperature for 10-15 minutes.
Tip: Infusion (releasing flavours) takes time, but boiling 'breaks' the flavours and evaporates aromas.

Tip: Cold cream whips best. No need to beat it stiff; it's better if it melts softly on top of the drink.
