Pour the cider and orange juice into a saucepan. Add the spices (cinnamon, cloves, orange zest) and sweeteners (honey, sugar).

Tip: The caramel notes of brown sugar deepen the apple flavour.

Heat over a medium flame until it begins to steam, but DO NOT boil. Maintain at this temperature for 10-15 minutes.

Tip: Infusion (releasing flavours) takes time, but boiling 'breaks' the flavours and evaporates aromas.

Whip the cream into soft peaks.

Tip: Cold cream whips best. No need to beat it stiff; it's better if it melts softly on top of the drink.

Strain the hot drink into glasses, spoon whipped cream on top, and garnish with an orange slice.

Tip: The contrast between the cream's fat and the hot, acidic drink is a special experience.

Does the alcohol evaporate?
If you only heat it (approx. 70-80°C), most of the alcohol remains. If you boil it, the alcohol evaporates and the flavour becomes 'flatter'.
