Tip: Fine grating ensures the flavour dissolves evenly in the sauce.

In a saucepan, mix the soy sauce, honey, vinegar, sesame oil, water, ginger and garlic.

Tip: Sesame oil has an intense flavour; use it as a seasoning, not for frying.

Boil together for 3-4 minutes until slightly thickened.

Tip: Boiling helps meld the flavours and soften the rawness of the garlic.

Finally, stir in the toasted sesame seeds and pepper. Serve warm or cold.
