Gyros (pronounced 'yee-ros') traditionally refers to meat roasted on a vertical rotisserie, but we can achieve that characteristic, charred-spiced flavour at home in a frying pan. This salad version skips the heavy pita dough (or uses it merely as a crunchy element), placing the emphasis on freshness and the cooling contrast of the yoghurt dressing.

Prepare the marinade: Mix 2 tbsp yoghurt, lemon juice, 1 crushed garlic clove, 1 tbsp olive oil and the spices. Toss the chicken strips in the mixture. Let it sit for 20 minutes.

Cut the pita into cubes, drizzle with a little oil, and toast in a dry frying pan until crisp (croutons).

Dressing (Tzatziki style): Mix the remaining yoghurt with half of the grated and squeezed cucumber, crushed garlic and a little salt.

Tip: Squeeze the water out of the cucumber, otherwise it will water down the dressing.

Chop the vegetables (lettuce, tomatoes, remaining cucumber, onion) and arrange on a plate.

Tip: Slice the onion wafer-thin so its flavour isn't too overpowering.

Fry the chicken in a hot frying pan until golden brown (approx. 6-8 minutes).

Tip: Do not overcrowd the pan, or the meat will steam in its own juices rather than sear.

Pile the hot chicken onto the salad, crumble over the feta, sprinkle with olives and the pita chips. Drizzle with the dressing.
