The cold, icy cousin of the 'Hot Toddy'. The scratchy, grainy notes of the whiskey are smoothed out by the floral sweetness of honey, and the acidity of lemon 'opens up' the drink. Although it seems simple (as there are only three ingredients), the secret lies in balance and dissolving: honey dissolves with difficulty in cold alcohol, so you need to know physical tricks for a perfect, homogeneous cocktail experience.

  • Old fashioned glass (whisky glass)
  • Bar spoon or long-handled teaspoon
  • Shaker (optional)

Squeeze the juice of half a lemon into the glass.

Tip: Essential oils from the peel also get in if the peel faces down when squeezing.

Add the honey and a tiny bit (approx. 1 tsp) of lukewarm water OR half the whiskey, and stir until the honey is completely dissolved.

Tip: This is the 'honey syrup' making step. If you skip this, the honey will immediately crystallise at the bottom of the glass from the ice. (Solubility).

Pour in the remaining whiskey.

Tip: Taste it: if too sweet, it can take a little more lemon; if too sour, a little more honey.

Add the ice cubes and stir for about 15-20 seconds.

Tip: Stirring not only chills but also dilutes, which 'knits' the flavours together.

Garnish with the lemon slice and enjoy.

Tip: Rub the lemon slice slightly on the rim of the glass so you smell it when drinking.

Why did the honey stay at the bottom of the glass?
Honey's viscosity increases (it hardens) in cold liquid. Always mix it with room temperature whiskey or a little lukewarm water first!
What whiskey should I choose?
A smoother Bourbon or Irish whiskey goes great with honey. Smoky Scotch whiskies (Islay) can overpower the delicacy of the honey.
