- Why did the drink turn bitter?
- If you blend it for too long, the cranberry seeds can break, which gives a bitter taste. Only blend until the flesh is puréed!
- Can I use dried cranberries?
- Not recommended, because they are too hard and sweet, and don't provide the same fresh, acidic texture. Choose frozen ones out of season.

Sort through the cranberries: discard any soft or damaged berries. Wash thoroughly, then drain. If using frozen, leave at room temperature for 10 minutes to thaw.
Tip: Frozen fruit releases juice when thawing; pour this into the blender too as it is full of flavour and colour.

Put the cranberries, honey, lemon juice and vanilla sugar into the blender. Pour over about 100ml of kefir for easier blending.
Tip: Make a thick purée with a little liquid first, so the blades catch the fruit pulp better than if it were swimming in lots of liquid. (Optimising shear force).

Start the machine and blend until smooth. Then pour in the remaining kefir and mix for just a moment or two to make it frothy.
Tip: The proteins in the kefir form a light foam when mixed with air, but can curdle from too much mixing.

If the skin pieces bother you, strain through a fine sieve, but it's better to leave them in for the fibre. Place in the fridge to rest for 10 minutes.
Tip: During resting, the flavours meld (diffusion), and the drink's temperature becomes optimal.
