- The cookie turned out too dry, why?
- Cocoa doughs are prone to drying out if overbaked. Always check with a skewer 5 minutes before the end!
- Can I put other spices in it?
- A pinch of chilli or cardamom can make it even more exciting.
Cinnamon Spiced Chocolate Cake
This cake is the 'Mexican Hot Chocolate' (spiced hot chocolate) version encased in a cake. The warmth of the cinnamon and the bitter depth of the cocoa offer such a complex taste experience that goes far beyond a simple chocolate cake. The spices do not overpower, but highlight the character of the chocolate, similar to how salt does with food.

Instructions
1
✓
Preheat the oven to 180°C. Grease and flour the tin.
Tip: For dark doughs, you can also dust the tin with cocoa powder instead of flour.
2
✓
Melt the butter and chocolate together over steam. Leave to cool.
Tip: Slow melting preserves the shine and taste of the chocolate.
3
✓
Sieve the flour, baking powder, cocoa, cinnamon, and salt into a bowl.
Tip: Even distribution of cinnamon is critical; nobody wants to bite into a pure cinnamon lump.
4
✓
Beat the eggs with the sugar until foamy, mix in the buttery chocolate.
Tip: The sugar doesn't need to dissolve completely, but the mass needs to lighten.
5
✓
Fold in the dry mixture and the milk. Mix until lump-free.
Tip: Do not overwork, only until the flour disappears.
6
✓
Bake for 35-40 minutes. Skewer test!
Tip: If there is sticky mass on the skewer, bake longer. If only moist crumbs, then it is good (juicy).
7
✓
Cool down, then dust with icing sugar.
Tip: You can also use cinnamon icing sugar on top.
