Preheat the oven to 220°C. In a hot frying pan with a little oil, flash fry the thinly sliced, marinated beef over high heat for 1-2 minutes. No need to cook through, just get some colour!

Tip: Due to the sugar content of the marinade it caramelises quickly, be careful not to burn it! [The Maillard reaction creates a flavour explosion on the meat surface.]

Stretch out the dough, place on the tray. Brush the edge thinly with sesame oil, and the centre with the Gochujang sauce.

Tip: The scent of sesame oil during baking is fantastic.

Sprinkle with cheese. Distribute the pre-fried meat and thinly sliced red onion over it.

Tip: Don't pile the meat up! So the heat reaches everywhere.

Bake for 12-15 minutes until the dough is golden brown.

Tip: Watch the meat edges, if they brown too fast, cover with foil.

Remove, let cool slightly. Sprinkle with fresh, sliced spring onion and sesame seeds.

Tip: The hot-cold contrast and the crunch of the onion complete it.

Why pre-fry the meat?
Raw meat would release a lot of juice onto the pizza, and might not become tender in 15 minutes. Flash frying seals in the flavours.
What meat should I use?
Good quality, marbled beef (e.g. sirloin or ribeye), which you can slice wafer-thin when frozen.
