Press tofu, cut into 2 cm cubes, toss in soy sauce. Let stand 10 mins.

Tip: Soy sauce salt content flavours tofu deeply.

Heat olive oil in pan medium heat. Remove tofu from marinade (blot if very wet), fry golden brown all sides.

Tip: Good when it has crispy crust outside.

Make tahini sauce: mix tahini, lemon juice, crushed garlic, salt, pepper. You'll see it thicken.

Add cold water tbsp by tbsp, stir constantly until reaching runny yoghurt consistency.

Tip: For emulsion (fat and water mixing) cold water helps achieve best creamy texture.

What if tahini sauce lumps?
Don't panic! Tahini 'seizes' first with water. Add little more water and stir persistently – it will suddenly smooth out and become creamy.
Tahini is bitter, is this normal?
Sesame hull can cause slight bitterness. Lemon acidity and pinch of salt (maybe little honey) counterbalance perfectly.
